Day 23

Yesterday, Diane Sanfilippo’s new book, The 21 Day Sugar Detox arrived at my house.  There are tons of recipes in it that I can’t wait to try.  Last night I used the ground beef and ground pork that I bought the other day as well as some veggies I had and made Meatza based on one of the recipes.

Meatza 1

Ingredients for Meat Crust
1 Pound ground beef
1 Pound ground pork
2 Eggs, beaten
2 Tablespoons almond meal (optional)
2 Teaspoons granulated garlic
2 Teaspoons onion powder
2 Teaspoons onion powder
2 Teaspoons dried oregano
2 Teaspoons sea salt
1 Teaspoons black pepper

Ingredients for toppings
1 Cup sliced and grilled zucchini
1/2 Cup sliced mushrooms
1/4 Cup sliced Greek olives
1 Cup tomato sauce
1/2 Cup shredded cheese (optional)

Preheat oven to 350 degrees

To make the crust, mix all the crust ingredients together.  Divide the meat into two portions and flatten out on a baking pan until its about 1/4 inch thick.  Bake in the oven for 15-20 minutes.  While the meat is cooking, grill the zucchini for about 3 minutes on each side.

Raise the oven temperature to 425 degrees

Meatza 3

Spread a thin layer of tomato sauce on the meat crust.  Layer the zucchini, mushrooms, olives and cheese on top.  Bake for 5-10 minutes until cheese is melted (if using cheese).

Note: You can put whatever you like on the pizza.  My grill isn’t working so I lightly pan seared the zucchini in light olive oil, however, I would have grilled it if I could have.  Of course, cheese is not Paleo.  And, tomato sauce is usually not Paleo either.   Although, you can find some at health food stores that is.
