Day 22
I love Sundays because I get to wake-up without an alarm. Even though my internal clock wakes me up earlier than I want, just the fact that I can close my eyes again and hold on to that last pull of sleep is the part I like the most.
After a good run with Resin I was ready for breakfast. I thought I would try the pumpkin pancakes in Practical Paleo by Diane Sanfilippo. They were awesome. They are not zoned, but, they are Paleo. I couldn’t help adding a little grass fed butter and maple syrup. It was Sunday!
Pumpkin Pancakes
Ingredients
4 Eggs
1/2 Cup canned pumpkin
1 Teaspoon pure vanilla extract
1 Tablespoon pure maple syrup (optional)
1 Teaspoon pumpkin pie spice
1 Teaspoon cinnamon
1/4 Teaspoon baking soda
2 Tablespoons coconut oil
Mix the eggs, canned pumpkin, vanilla extract and maple syrup together in a bowl. Sift in the pumpkin pie spice, cinnamon, baking soda into the wet ingredients. Melt the coconut oil in a frying pan and pour in the mix. Cook as you would regular pancakes.
