paleospaghettiPaleo Spaghetti with Zucchini Noodles

I whipped this together last night and forgot to take a picture so I found one that is similar. It took me 20 minutes!

Ingredients:
1 lb ground meat (I used turkey)
1 onion
2 cloves garlic
1 26 oz. can crushed tomatoes
1 26 oz. can diced tomatoes with basil, garlic, and oregano
1 package of sliced mushrooms
Basil, Parsley, Oregano, Crushed Red Pepper (optional)
Salt and Pepper to taste
4 zucchini (for “spaghetti”)

Method:
Saute the onion and garlic in some olive oil, add the meat and cook until it is brown seasoned with salt and pepper. Drain the meat and throw it in the crockpot. Add all other ingredients and cook on high for 3-4 hours or low for 6-7 hours.  Slice your zucchini into thin slices or however you want, and toss them in some boiling water until desired texture. Serve your meat sauce over it and enjoy! Top it with some parmesan if you eat dairy.

This is very fast and easy and you can modify many ingredients to your liking. You could do the sauce in a pan if you don’t want to wait for the crockpot and add any other ingredients you like to your sauce. This sauce is also great over spaghetti squash!
