Day 4

I don’t really save my Paleo pancakes for Sunday.  I eat them every day.  I’m waiting to get tired of them and it hasn’t happened yet.  Maybe that’s only because I’m so tired of eggs!

There is something about eating these banana pancakes first thing that allows me to not crave anything sweet the rest of the day.   Maybe its because they are low on the glycemic index which therefore means that they are a slow-releasing carb.  The sugars in the banana do not create a huge spike in insulin when comsumed.   That being said, they are a fruit and have plenty of carbs in them, so, for best results, you should Zone them and control your intake of such sugars.

This is a two block zone meal and its also paleo!

Paleo-Zone Banana Pancake

Ingredients
2/3 Banana (2 blocks carb)
2 Eggs (2 blocks protein)
1 Teaspoon of vanilla extract
1 Teaspoon cinnamon
1 Teaspoon coconut oil (about 3 blocks fat, so a little over)

Cooking Instructions
Heat coconut oil in a medium frying pan over medium heat.  In a small bowl, mash up banana with a fork until as smooth as possible.  Add eggs, vanilla and cinnamon to the banana and beat together.  Once the flying pan is warm, pour in the mixture.  Flip when the bottom is golden and the top is fairly solidified.

Cooking Time
5-10 minutes

For best results, use very ripe bananas and I hear that for those of you with the patience, blending the batter makes them much smoother in texture.
