Day 15

The Paleo Potluck on Tuesday night was a success!  There were so many great dishes and new meal ideas.  If you have a favorite snack or meal that you make all the time, please send it to us.  Here is a quick chicken soup that Cortney made the other day.

Last Minute Chicken Veggie Soup
 
I got home from the gym last night around 7:30 not knowing what to do with the chicken breasts I had taken out of the freezer. Since it was “cold” outside and I always have some random veggies in the fridge, I threw this together. I poached the chicken breasts in boiling broth with sea salt, black pepper and parsley. While it was cooking I chopped up 2 zucchini, 2 carrots, 5 stalks of celery, and a half of an onion. When the chicken was cooked, I took it out and threw all the veggies in and chopped the chicken. I returned everything back to the pot and let it cook until the veggies were done. We were eating by 8:00 pm.

There is always something in the house that you can cook healthy if you keep your fridge, pantry and freezer stocked with the essentials. I always make sure I have chicken, carne asada, ground beef, ground turkey, and pork roasts (Ramey’s and Costco run). Most of these meats can be thawed under water in less than 15 minutes. I always have veggies in the fridge; I buy whatever looks fresh at the store I buy extra of it if I have recipes for some of it. In my pantry I always have broths, canned tomatoes of all sorts, canned chicken, and hot sauces (Frank’s Red Hot, Siracha, Cholula, etc.). With these basics I can make any meal if I really want to.  Be prepared and don’t be afraid to get creative or throw random things together, you might surprise yourself :).
